I believe Malaysians are still not familiar with PUTIEN莆田, so here is an introduction of PUTIEN :
PUTIEN started out as a humble coffee shop in Singapore in 2000, and has since grown into an international brand with 24 branches in Malaysia, Indonesia, Hong Kong, Shanghai and Taiwan. Mr. Fong Chi Chung, the founder of PUTIEN move to Singapore from his hometown Putian, a beautiful coastal suburb of Fujian, China. He missed home so much and hoped to share authentic Putian cuisine with the world, hence this is the origin of PUTIEN. Through the years, PUTIEN has won numerous awards and is even endorsed by Taiwanese actress Brigitte Lin and Hong Kong celebrity and food critic Chua Lam. The latest recognition of PUTIEN’s excellence is its feature in the MICHELIN Guide Hong Kong Macau 2016 (BIB GOURMAND RESTAURANT - Causeway Bay Outlet). This award is given to restaurants in acknowledgement of their exceptional good food at moderate prices!
I'm proudly invited to join the exclusive food tasting media event by PUTIEN莆田 at their newly opened branch SS15 Courtyard. It give me a good first impression while i visited PUTIEN at Singapore, my first time to try authentic Putian cuisine and that is truly impressive!
The event was graced by special guest John Tan who is an uprising actor of director Saw Teong Hin’s upcoming Hokkien movie, “You Mean The World To Me”. Throughout the food tasting session, it is featuring 10 of PUTIEN’s signature delicacies specially selected to bring the guest on a delicious culinary journey. Each guest was treated to a sensory expedition with an array of dishes that featured all 5 tastes – sweetness, sourness, bitterness, saltiness, and umami (pleasant savoury taste) along with other sensors such as temperature, spiciness, and texture.
Putian is well known for its many wonderful agricultural produce and seafood such as abalone, seaweed, bamboo clams as well as handcrafted products for example Yan Pi (Fujian-style wonton wrapper made of pork meat paste pounded by hand for 3 hours) and bee hoon made from hand-milled flour and sundried to ensure fine and silky noodles that is not brittle. Little wonder then that Putian or Heng Hwa cuisine is characteristically light, down-to-earth, and flavourful, with an emphasis on fresh ingredients.
" Fresh Ingredients, Original Taste ", with this PUTIEN's tag line, skillfully bring out the original taste of each ingredient. I was told by the Executive Chef for PUTIEN Malaysia, Li Shunrong who is from Putian, from its cultivation to harvesting, transportation and preparation is key to ensuring that quality and freshness is maintained when the dish is served to each guest at PUTIEN. For example, only the top 15mm of top-grade first harvest seaweed that is harvested within 30 days after cultivation is used in the Seaweed with Mini Shrimps starter to retain the best texture and nutrition.
With the tale of "The Egg and the Guest" , for it truly embodies the essence of the Putian people – putting their guests before themselves, giving them none other than the very best hospitality.
Highly recommend their Spice Mum Chilli Sauce, it is quite spicy, tangy, and incredibly seafood aromatic, this appetizing dip goes well with just about anything!
The bitterness is not for everyone, but PUTIEN's ice bitter gourd is definitely is a superstar! I don't eat bitter gourd because of its extremely bitter-tasting veggie, but i like this beautifully presented dish. First bite, surprised with its crisp and crunch, dipped second pieces in honey which was bitter and sweet, refreshing to cleanse the palate at the start of the meal. It doesn't taste like bitter gourd anymore, MUST TRY!!!!!
Nanri Abalone, a famed produce of Putian. Fujian Province’s Nanri Islands is a famed breeding ground of the world’s finest abalone varieties due for its distinctive features. Bred in pristine water and with a diet of natural seaweed and kelp, the Nanri Abalone is famed for its tenderness and rich nutritional value. This ice abalone freshly imported from Putian, retains its tenderness even cooked, a very delicacy dish.
Drunken Cockles 一品醉蚶
Cockles drizzled with a specialty blend of garlic sauce, then topped with generous servings of garlic flakes and chillies. Pop these for a burst of sweet, savoury and mildly spicy tastes all at once. I don't eat cockles, but i always have to try new things (even though i don't like it) during food tasting. This drunken cockles is acceptable for me, i think it is because of the aroma of garlic strong enough to cover the fishy smell of cockles itself. A must try.
Seaweed With Mini Shrimps 虾苗伴紫菜
Everybody know the nutrition of the seaweed, PUTIEN to ensure the quality so they use only 15cm-long top-grade seaweed that is harvested within 30 days after cultivation! Tossed with quality mini shrimps imported from the South China Sea region, every mouthful of this starter is a delightful and refreshing experience.
Stir-Fried Yam 酥炒芋头
MUST ORDER!!!! Using only the middle and best portion of the premium yam (Colocasia esculenta), cut into yam cubes and then skilfully fried to make up a savoury-sweet traditional offering with crisp golden exterior and light fluffiness within. Heavenly delicious!!!
Stewed Putien Bean Curd in Claypot 焖豆腐
“September pearls” are beans that are found only in Putian and considered to be a superior ingredient for bean curd. This premium claypot mixed with more than 10 ingredients such as dried scallops, pork, mushroom and eggs. Silky smooth texture stewed bean curd might be your favourite.
Deep Fried Pig's Trotters with Salt & Pepper 椒盐猪手
Specifically using only 7-inch pig’s trotter, each trotter then goes through a 12-hour-long culinary method before being served. Sink your teeth into the crunchy skin as it gives way to tantalizing treat of collagen, tender juicy meat makes you want for more.
Fried Heng Hwa Bee Hoon 兴化米粉
PUTIEN Heng Hwa Bee Hoon is the only sundried vermicelli milled by hand in Putian. Unlike machine dried bee hoon, PUTIEN Bee Hoon is ALL handmade so you can see the different texture within Bee Hoon. Manually drying progress under the sun at the crack of dawn ensures that the bee hoon is translucent, silky, fine, chewy but not brittle.
Loquat, a Putian staple, rich in vitamins, minerals, and anti-oxidants. Great combination of tender and juicy loquat mixed with traditional Chinese herbs whilst the aroma of mint activates the salivary glands in our mouth. Such a sweet, nutritious and refreshing summer treat!
Overall, PUTIEN is serving good quality and delicious authentic Putian cuisine. Definitely i will come back again and again. =)
