Pescado à la Veracruzana is one of the most famous seafood dishes of Veracruz on the Caribbean coast of eastern Mexico. The fish fillet simmered in tomato sauce, capers, olives and capsicum. The fish fillet is tender and flavourful.
Mole negro con pollo (Chicken in traditional black "Mole" sauce)
What is Mole negro? This sauce is spicy and contains chocolate and so, along with mole poblano is the type of sauce most people associate with moles. Popular with enchiladas and shows up in chicken Mexican dishes. Personally i think the chicken's meat texture is not smooth enough as i like to eat the tender one.
