California Raisins is one of my favourite snack in my childhood, i love to eat and put it as topping on any dessert. Well~ i am still loving it now because this little dry fruits might look shrivelled, but when you know their health benefits, i am sure you will like it too!

Recipe :
Swirled Choco Berry Pavlova with California Raisins
Meringue
- 4 large egg whites
- 1/2 tsp white vinegar / lemon juice
- 230g caster sugar
- 50g dark chocolate (70% cacao), melted
Topping ( Whipping Cream)
- 300 ml heavy whipping cream
- 1 tsp vanilla extract
- 1 tbsp icing sugar
- 200g California Raisins
- 200 fresh strawberries
- cocoa powder and powdered sugar, to dust
Topping ( Cherry Sauce)
- 200g cherries
- 1/4 cup of brown sugar
- 1/4 cup of water
- 1 tbsp cornstarch
- 1 tbsp lemon juice
Methods :
Meringue
2. Add in white vinegar/ lemon juice in the egg whites and whisk it until they frothy. Gradually add in sugar, whip until the meringue holds stiff peaks and glossy.
3. Drizzle the melted chocolate into the bowl with meringue, gently fold a few times (don't mix).
4. Spoon the mixture onto 2 equally sizes rounds on the baking sheet, spread the mixture and making pretty swirls and peaks.
5. Transfer to the oven and bake it at 100 Celsius for 90 minutes (or until the meringue look crisp and no longer stick to the paper). Turn off the heat, leave the door ajar and let meringue cool completely in the oven.
1. In a medium saucepan, place the cherries, sugar and water. Bring to the boil over medium heat, must stirring often to avoid sauce scorch on the bottom.
2. In a small bowl, mix well the lemon juice and cornstarch. Then put into the boiling cherry mixture.
3. Cook until the liquid has properly thickened. Remove from heat and cool to room temperature.
Topping ( Whipping Cream)
1. Whip the cream with all ingredients, until soft peaks hold.
2. Mix it with California Raisins.
1. Place the first meringue disc on a cake stand. Spread with half of cream, put some strawberries, then dust with cocoa powder.
2. Put second meringue disc on top, spread with another half of cream. Decorate with remaining strawberries, cherries and California Raisins. Dust with powdered sugar and cocoa powder. Drizzled with cherry sauce.
Pavlova is always a show stopper, this sophisticated yet elegant dessert is prefect served for festive celebration.
My version has a crispy meringue on the outside and for the fluffy soft inside that leaves you feeling happy. I have updated the traditional pavlova with my favourite California Raisins and drizzled with dark chocolate and cherry sauce.
